Zesty Chicken Bowls

ZESTY CHICKEN, CHARRED CORN, AND BLACK BEAN BOWLS WITH GUACAMOLE, AND LIME CREMA


PREP TIME: 10 Minutes/ COOK TIME: 20 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 830/ Protein 43g

DIFFICULTY LEVEL: Easy

INGREDIENTS: Scallions, Corn, Black Beans, Lime, Cilantro, 1 TSP Garlic Powder, 1 TSP Chili Powder, 1/8 Cup Sour Cream, 1 TSP Cumin, Guacamole, 1 TSP Smoked Paprika, Chopped Chicken Breast, 3/4 Cup Jasmine Rice


Step 1: Cook Rice

Wash and dry produce

In a small pot, combine 2 TBSP of butter, rice, 1.25, and 1/4 TSP of Salt and Pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

Step 2: Prep

While rice cooks:

Trim and thinly slice scallions

Drain corn and black beans, pat dry with paper towels

Zest and quarter lime

Roughly chop cilantro

Pat and dry chicken with paper towels

Step 3: Cook Chicken and Vegetables

In a large pot on medium heat combine: 3 TBSP of butter, and a drizzle of oil ,chicken, corn, black beans, scallions garlic powder, chili powder, 1/4 TSP of sugar, paprika, juice from half a lime, and 1/4 TSP of salt and pepper

Mix well and cook for 15 minutes

Step 4: Mix Crema

While chicken cooks, in a bowl combine sour cream, lime zest, a squeeze of lime juice, and 1/4 TSP of salt and pepper.

Mix well, and set aside

Step 5: Finish and Serve

Fluff Rice with a fork, fold in cilantro and squeeze lime juice. Mix well

Divide rice between shallow bowls

Top with chicken and vegetable mixture

Garnish with guacamole, lime crema, and scallions

Serve hot and enjoy!
