Sri Lankan Shrimp

SPICY SRI LANKAN BUTTER SHRIMP WITH BELL PEPPER, RED ONION, CHILI FLAKES, AND RICE


PREP TIME: 15 Minutes/ COOK TIME: 45 Minutes

DIFFICULTY LEVEL: Hard

INGREDIENTS: 1 TSP Chili Flakes, Red Onion, 1 Cup Tempura Batter Mix, Ginger, 1 TBSP Curry Powder, 1 TSP Garlic Powder, 1/8 Cup Ketchup, Scallions, 1 TBSP Sriacha, 3/4 Cup Jasmine Rice, Shrimp, Green Bell Pepper, Garlic


Step 1: Cook Rice and Heat Oil

In a heavy bottomed pan, fill pan 1/3 of the way with cooking oil on medium-high heat

  • Oil is heated when a drop of batter sizzles when it reaches oil

Wash and dry produce

In a small pot, combine 2 TBSP of butter, rice, 1.25, and 1/4 TSP of Salt and Pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

Step 2: Prep

While rice cooks:

Halve, decore, and slice bell pepper into thin strips

Thinly slice onion

Mince Garlic and Ginger

Thinly slice scallions

Step 3: Prepare and Cook Shrimp

In a large bowl combine tempura flour, 1/2 of curry powder, 1/4 TSP of salt and pepper, and 1/3 cup of water. Mix well. Add 1 TBSP of water at a time until mixture reaches pancake consistency

Add shrimp, mix until well combined

Once shrimp is mixed with tempura batter, carefully place into hot oil in a single layer

Cook for 2-3 minutes

Cook in batches if necessary

After shrimp has fried, place on a lined paper towel plate

Season with a pinch of salt

Set aside

Step 4: Saute Vegetables

While shrimp cooks, in a medium pot over medium heat melt 2 TBSP of butter

Combine onions, bell pepper, scallions, remaing curry paste, ginger, garlic, ketchup, 1 TSP of sugar, 1/2 Cup of water, and 1/4 TSP of salt and pepper

Cook for 5-7 minutes

Step 5: Toss Shrimp

Toss set aside shrimp into pot with vegetables

Add 1/4 TSP of salt and pepper

Mix well

Cook for 2 minutes

Step 6: Finish and Serve

Fluff rice with fork

Divide rice between shallow bowls, top with vegetables and shrimp

Garnish with scallions

Serve hot and enjoy!
