Homemade Chicken Noodle Soup With Dark Meat Chicken, Sour Cream, and Dill

DIFFICULTY LEVEL: Hard

INGREDIENTS: 2 Eggs, 2 Cups Flour, Onion, Celery, Carrots, Dill, 1 TSP Garlic Powder, 1 TSP Celery Salt, 2 TBSP Sour Cream, 2 TBSP Chicken Bouillon Paste, Diced Skinless Dark Meat Chicken


Step 1: Make Dough

Wash and dry produce

In a large bowl whisk together eggs, 1 TBSP olive oil, 1 TBSP water, and 2 TSP of salt

Add 1. 5 cups of flour to egg mixture

Using a wooden spoon stir vigorously until a sticky dough forms for 2 minutes

Step 2: Knead Dough

Sprinkle a clean work surface with 2 TBSP of Flour

Transfer dough to floured surface, gather into a rough ball

Roll into a ball by folding dough over itself, rolling for 3 minutes

Cover dough with a clean kitchen towel, let rest for 1 hour

Step 3: Prep

While dough rest, halve, peel, and dice onion

Dice celery

Trim, peel, and dice carrots

Pick and roughly chop fronds from dill

Step 4: Cut Noodles

Once dough has rested, lightly dust work surface with flour

Transfer dough to floured work surface

Using rolling pin, rolling to a flat circle laying at 12 inches

Use a sharp knife, cut dough into strips, however long you like

Cover with a kitchen towel

Step 5: Start Soup

Pat chicken dry with paper towels

Heat 2 TBSP butter and a drizzle of oil in a large pot over medium heat

Add onion, celery, and carrots, season with 1/4 TSP of salt and pepper

Cook for 4 minutes

Stir in chicken, garlic powder, and celery salt

Cook for 3 minutes

Step 6: Add Noodles

Stir in 4 cups of chicken stock or 4 cups of water, and bouillion paste

Bring to a boil

Cover and reduce heat to medium

Cook stirring occasionally for 5 minutes

Carefully add half the noodles to pot , one at a time. Stir occasionally

Cook for 4 minutes

Step 7: Finish and Serve

Remove soup from heat

Stir in half the dill, season with 1/4 TSP salt and pepper

Divide soup between bowls

Sprinkle with remaining dill

Dollop with sour cream

Serve hot and enjoy!
