Chicken Al Lemone

Chicken Penne Al Lemone With Zucchini, Toasted Garlic, and Fresh Parsley


PREP TIME: 10 Minutes/ COOK TIME: 20 Minutes

DIFFICULTY LEVEL: Easy 

INGREDIENTS: Garlic, Zucchini, Lemon, Parsley, Penne Pasta, Chopped Chicken Breast, 1/2 Cream Sauce Base, 4 TBSP of Parmesean Cheese


Step 1: Prep

Bring a large pot of salted water to a boil

Wash and dry produce

Peel and thinly slice garlic

Trim and quarter zucchini

Zest and quarter lemon

Finely chop parsley

Step 2: Toast Garlic

Heat a drizzle of oil in a large pan over medium heat

Add garlic. Cook for 1 minute

Turn off heat

Transfer to a paper towel lined plate

Step 3: Cook Pasta and Zucchini

Once water is boiling, add penne

Cook for 11 minutes

Reserve 1 cup of pasta cooking water, the drain, and set aside

While pasta cooks, heat a drizzle of oil in pan used for garlic over medium heat

Add zucchini, and cook for 6 minutes

Season with 1/4 TSP of salt and pepper

Transfer to plate

Step 4: Cook Chicken

Season chicken with 1/4 TSP of salt and pepper

Heat a drizzle of oil in pan used for zucchini over medium heat

Add chicken in a single layer

Cook for 6 minutes

Step 5: Make Sauce

Stir in cream sauce base, 1/4 cup of reserved pasta water, a big squeeze of lemon juice, and 1/4 TSP of salt and pepper

Cook for 3 minutes

Step 6: Finish and Serve

Add drained pasta, toasted garlic, zucchini, half the parmesean, half the parsley, half the lemon zest, 2 TBSP of butter, and 1/4 TSP of salt and pepper

Mix well

Divide pasta between bowls

Top with remaining parmesean and parsley

Serve with remaining lemon wedge on the side

Serve hot and enjoy!
