Southwest Chili Macaroni With Green Pepper And Smoky Red Pepper Crema

DIFFICULTY LEVEL: Easy

INGREDIENTS: Ground Beef, Pablano Pepper, 1 TBSP Beef Bouillon Paste, Scallions, ½ Cup Mexican Cheese, 1 TSP Hot Sauce, 2 TBSP Sour Cream, 1/8 Cup Tomato Paste, Cavatappi Pasta, 4 TBSP Smoky Red Pepper Crema, 1 TBSP Southwest Spice Blend


Step 1: Prep

Dice Pablano Pepper

Thinly slice scallions

Step 2: Cook Pasta And Pepper

In a large pan over medium heat, melt 2 TBSP of Butter

Add pablano pepper, and season with ¼ TSP of salt and pepper

Cook for 7 minutes

For Pasta: Boil pot of water, add cavatappi.

Season heavily with salt

Boil for 11 minutes

Reserve ½ cup of pasta water. Drain remainder

Step 3: Cook Beef

Once pepper has cooked, add ground beef. Mash meat, breaking up into small pieces

Add bouillion paste

Season with southwest spice blend, and ¼ TSP salt, pepper, all purpose seasoning and paprika

Mix well

Cook for 7 minutes

Step 4: Cook Sauce

Add ½ cup of reserved pasta cooking water and stock concentrates to pan with beef mixture

Season with ½ TSP of salt and pepper

Bring to a simmer and cook for 3 minutes

Step 5: Finish Pasta

Reduce heat to low, and stir in drained cavatappi, sour cream, smoky red pepper crema, half the Mexican cheese blend, 1 TBSP of butter, and hot sauce

Season with ¼ TSP of salt and pepper

Step 6: Finish And Serve

Top beef cavatappi with remaining Mexican cheese blend, cover pan until cheese melts for 2 minutes

Divide between bowls, top with scaillions

Serve hot and Enjoy!
