Sticky Plum Pork Stir Fry With Ginger Scallion Rice, Broccoli, Bell Pepper And Peanuts

DIFFICULTY LEVEL: EasyINGREDIENTS: Onion, Garlic, Ground Pork, Scallions, 1 TSP Sriracha, 1/8 Cup Plum Sauce, 1/8 Cup Sweet Soy Glaze, Broccoli, 3/4 Cup Jasmine Rice, Ginger, Peanuts, Green Bell Pepper
Step 1: Start Prep And Cook Rice
Wash and dry produce
Trim and thinly slice scallions, separating white from greens
Peel and mince garlic
Peel and mince ginger
Heat a drizzle of oil in small pot over medium heat
Add scallion whites, garlic, and ginger. Cook for 2 minutes
Add 2 TBSP of butter, add rice, 1.25 cup of water, and ¼ TSP of salt and pepper
Bring to a boil. REDUCE HEAT TO LOW, AND COVER
Cook until rice for 15 minutes
Keep covered off heat until ready to serve
Step 2: Finish Prep And Start Stir Fry
While rice cooks, halve, peel, and thinly slice onions
Core and deseed bell pepper, slice into strips
Cut broccoli into florets
Heat a large drizzle of oil in a large pan over medium heat
Add onion, bell pepper, and broccoli. Cook for 7 minutes. Season ¼ TSP of salt and pepper
Step 3: Finish Stir Fry
Add a drizzle of oil to a pan, stir in pork, and ¼ TSP if salt and pepper. Cook for 5 minutes
Reduce heat to low, and stir in plum sauce, half the sweet soy glaze, ¼ cup of water, and 2 TBSP butter. Cook for 2 minutes
Step 4: Finish and Serve
Fluff rice with a fork, top with stir fry
Drizzle with Sriracha
Sprinkle with scallion greens and peanuts
