Cajun Tilapia With Rice And Beans Plus Roasted Green Beans And Lemon Crema

DIFFICULTY LEVEL: MediumINGREDIENTS: 2 TBSP Sour Cream, Green Beans, Broccoli, Three Bean Blend, Vegetable Bouillon Paste, ¾ Cup Jasmine Rice, 1 TBSP Savory Paprika Blend, Tilapia, Lemon, Scallions
Step 1: Cook Rice and Prep
Adjust rack of oven to top position, and preheat oven to 450
Wash and dry produce
In a small pot combine 2 TBSP of butter, rice, 1.25 cups of water, and ¼ TSP of salt and pepper. Bring to a boil. REDUCE HEAT TO LOW AND COVER. Simmer on low heat for 15 minutes
Remove from heat and keep covered until ready to serve
While rice cooks, trim green beans
Thinly slice scallions, separating whites from greens
Quarter lemon
Step 2: Roast Broccoli And Green Beans and Tilapia
Toss green beans on one side of a baking sheet with a drizzle of oil, and ¼ TSP of salt and pepper
Pat tilapia dry with paper towels
Drizzle filet with oil, season with ¼ TSP of salt and pepper
Place on empty side of sheet
Roast on top rack until green beans for 15 minutes
Step 3: Cook Beans
Meanwhile, in a second small pot, combine scallion whites, three beans blend and it's liquid, stock concentrate, and remaining savory paprika blend
Bring to a boil, then reduce heat to low
Cook for 8 minutes
Season with ¼ TSP of salt and pepper
Step 4: Finish And Serve
In a small bowl combine sour cream, and juice from one lemon wedge
Season with ¼ TSP of salt and pepper
Fluff Rice with fork
Divide rice, three beans blend, green beans, and tilapia between plates in separate sections
Drizzle fish with lemon crema, garnish with scallion greens
Serve with lemon wedge on the side
