Spanish Style Steak And Crispy Fried Potatoes With Shishito Peppers, Romesco Sauce, And Paprika Aioli

DIFFICULTY LEVEL: MediumINGREDIENTS: 6 TBSP Romesco Sauce, Potatoes, Savoy Paprika, Lemon, Ranch Steak, 4 TBSP Mayo, Shishito Peppers, 1 TSP Garlic Powder
Step 1: Prep
Wash and dry produce
Peel and dice potatoes
Zest and quarter lemon
Step 2: Start potatoes
Place potatoes in a medium microwave safe bowl and season all over with half the garlic powder, and ¼ TSP salt and pepper
Cover tightly with plastic wrap and microwave for 7 minutes
Once potatoes are done, dry off any excess moisture with paper towels
Step 3: Make Aioli And Lemon Salt
While potatoes cook, in a small bowl combine mayo, ½ TSP savory paprika blend, and a squeeze of lemon juice. Refrigerate until ready to serve
In a separate small bowl, combine 1 TSP of salt and pepper with lemon zest. Set aside until ready to use.
Step 4: Finish Potatoes
Heat 1/3 inch layer of oil in a large pan over medium heat
Once oil is hot, carefully add potatoes and cook for 7 minutes
Transfer to a paper towel lined plate and immediately season with 1/4 TSP of salt and pepper
Set aside until ready and serve
Step 5: Season and Cook Steak
Meanwhile, pat steak dry with paper towels and season all over with remaining garlic powder, as much remaining savory paprika blend as you like, and ¼ TSP of salt and pepper
Heat a drizzle of oil in a second large pan over medium heat
Once oil is hot, add 7 minutes per side
Turn off heat, transfer to cutting board
Step 6: Blister Shishito Peppers
Heat a drizzle of oil in a pan used for steak over medium heat
Add Shishito Peppers, cook for 3 minutes
Season with lemon salt
Transfer to plate
Step 7: Finish and Serve
Slice steak against the grain
Divide steak, potatoes, and Shishito Peppers between plates in separate sections
Top steak with romesco sauce and serve paprika aioli on the side for dipping potatoes
Serve with remaining lemon wedges
