French Onion Pork
FRENCH ONION SMOTHERED PORK CHOPS WITH MASHED POTATOES AND GREEN BEANS
PREP TIME: 10 Minutes/ COOK TIME: 30 Minutes

DIFFICULTY LEVEL: MEDIUM
INGREDIENTS: Potatoes, 2 TBSP Sour Cream, Green Beans, Pork Chops, 1 TSP Dried Thyme, Swiss Cheese
Step 1: Make Mashed Potatoes
Preheat oven to 425 degrees
Wash and dry produce
Dice potatoes, place in a medium pot with salted water covering potatoes.
Bring to a boil
Cook for 12 minutes
Reserve 1/2 cup potato cooking liquid
Drain
Return potatoes to pot and mash with sour cream, 1 TBSP butter until smooth, adding splashes of potato cooking liquid as needed. Season with 1/4 TSP salt and pepper
Step 2: Prep and Roast Green Beans
While potatoes cook, trim green beans
Toss with a drizzle of oil, 1/4 TSP salt and pepper
Roast in oven for 15 minutes
While green beans cook, halve peel, and thinly slice onions
Step 3: Cook Pork Chops
Pat pork dry with paper towels, and season all over with 1/4 TSP of salt and pepper
Heat a drizzle of oil in a large pan over medium heat. Add pork
Cook for 4 minutes per side
Transfer to a plate
Step 4: Cook Onion
On medium heat add a drizzle of oil to pan used for pork
Add onion, and half the thyme
Cook for 8 minutes
Stir in 1 TSP sugar, and a splash of water
Cook until onion is jammy for 3 minutes. Season with 1/4 TSP salt and pepper
Step 5: Broil Pork Chops
Once green beans are done, remove from oven, and divide to plates
Set oven to broil
Place pork on baking sheet used for green beans, top with swiss cheese
Broil for 2 Minutes
Step 6: Finish and Serve
Divide mashed potatoes and pork chops between plates with green beans
