HERBY SALMON WITH RED PEPPER CREAM SAUCE WITH GARLIC COUSCOUS AND ROASTED GREEN BEANS


PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Garlic, Green Beans, Onion, Salmon, 1 TBSP Tuscan Heat Spice, 2 TBSP Cream Cheese, 2 TBSP Sour Cream, 1/8 Cup Red Pepper Jam, 3/4 Cup Israeli Couscous, 2 TBSP Seafood Bouillon Paste


Step 1: Prep

Wash and dry produce

Preheat oven to 425 degrees

Peel and mince garlic

Trim and halve green beans

Halve, peel onion. Slice half into thick wedges, and finely mince remaining onion

Step 2: Make Couscous

Heat a drizzle of oil in a small pot over medium high heat

Add garlic, and cook for 1 minute

Stir in couscous, 1 cup of water, and 1/4 TSP of salt and pepper

Bring to a boil

REDUCE TO LOW, AND COVER

Simmer for 8 minutes

Keep covered off heat until ready to serve

Step 3: Roast Vegetables

While couscous cooks, toss green beans and onion wedges on a baking sheet with a drizzle of oil, and 1/4 TSP of salt and pepper

Roast on top rack for 16 minutes

Step 4: Cook Salmon

Meanwhile pat salmon dry with paper towels, and season all over with 1/4 TSP of Tuscan Spice, and salt and pepper

Heat a drizzle of oil in a large pan over medium heat

Add salmon to pan, skin side down

Cook for 7 minutes

Flip and cook for 3 more minutes

Transfer to a cutting board

Step 5: Make Sauce

Melt 1 TBSP butter in same pan used for salmon over medium heat

Add minced onion

Cook for 3 minutes

Add 1/2 Cup of water, cream cheese, bouillion paste, pepper jam, and 1/4 TSP of Tuscan Spice salt and pepper

Cook for 3 minutes

Remove from heat

Stir in sour cream until smooth

Season with 1/4 TSP of salt and pepper

Step 6: Finish and Serve

Divide couscous, roasted vegetables, and salmon between plates

Drizzle with red pepper sauce

Serve hot and enjoy!
