Casio E Pepe Leek Soup

CACIO E PEPE LEEK AND CANNELLINI SOUP


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 970/ Protein 30g

DIFFICULTY LEVEL: Easy

INGREDIENTS: Leeks, Lemon, Potatoes, 1 Cup Cream Sauce, 1 TSP Garlic, 1/8 Cup Parmasean Cheese, 1/2 Cup Mozzarella Cheese, 1 Can Cannellini Beans


Step 1: Prep

Trim and discard root ends, and dark green tops from leeks, halve lengthwise. Rinse throughly removing any grit between layers. Pat dry with paper towels. Lay flat and thinly slice leeks into strips

Dice potatoes

Quarter Lemon

Step 2: Cook Leeks

Heat a drizzlenof oil in a large pot over medium heat

Add leeks, and cook for 5 minutes

Step 3: Make Soup

In pot with leeks, combine: beans with liquid, potatoes, cream sauce base, mozzarella cheese, parmesean cheese, garlic powder, 1.5 cups of water, 2 TSP of pepper, and 1 TSP salt

Cover and cook for 10-15 minutes or until potatoes are tender

Step 4: Finish and Serve

Divide soup between bowls

Top with a squeeze of lemon juice, and remaining lemon wedge in the side

Serve hot and enjoy!
