Dominican Guisado
DOMINICAN POLLO GUISADO WITH DARK MEAT CHICKEN AND ZESTY RICE

INGREDIENTS: Onion, Green Olives, 2 TBSP Southwest Spice Blend, Tomato, 2 TBSP Chicken Bouillon Paste, Diced Skinless Dark Meat Chicken, 1/8 TBSP Tomato Paste, 3/4 Cup Jasmine Rice, 1 TSP Dried Oregano, Lime, Green Bell Pepper, Garlic
Step 1: Cook Rice
In a small pot, combine 2 TBSP of butter, rice, 1.25 Cups of water, and 1/4 TSP of salt and pepper
Bring to a boil
REDUCE HEAT TO LOW AND COVER
Simmer for 18 minutea
Keep covered off heat until ready to serve
Step 2: Prep
While rice cooks, wash and dry produce
Zest and quarter lime
Peel and mince garlic
Halve, core and slice bell pepper and onion
Roughly chop olives
Dice tomatoes
Step 3: Start Stew
Pat chicken dry with paper towels
In a medium bowl, combine chicken, oregano, half of the southwest spice blend, 1/4 TSP sugar, a large drizzle of oil, juice from half the lime, and 1/4 TSP of salt and pepper
Heat a large pan over medium heat, add chicken and marinade
Cook for 3 minutes
Step 4: Add vegetables
Add garlic, and tomato to pan with chicken mixture
Cook for 1 minute
Stir in bell pepper, onion, bouillion paste, remaining southwest spice blend, 1/2 cup of water, and 1/4 TSP salt and pepper
Cook for 6 minutes
Step 5: Finish Stew
Stir in olives, tomatoe, and juice from one lime wedge into pan
Cook for 2 minutes
Season with 1/4 TSP salt and pepper
Step 6: Finish and Serve
Fluff rice with fork, stir in lime zest
Divide rice and stew between shallow bowls
Serve with remaining lime wedge on the side
Serve hot and enjoy!
