Pesto Chicken Rollatini

PESTO CHICKEN ROLLATINI OVER CAVATAPPI WITH ZUCCHINI AND PARMESAN


PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Zucchini, Shallot, 1/8 Cup Basil Paste, 1/8 Cup Cream Cheese, 1 TBSP Italian Seasoning, 1/8 Cup Tomato Paste, 1 TSP Garlic Powder, Cavatappi Pasta, Chicken Cutlets, 1/2 Cup Parmasean Cheese, 2 TBSP Chicken Bouillon Paste, 1/4 Cup Panko Bread Crumbs


Step 1: Cook Pasta

Wash and dry produce

Preheat oven to 425 degrees

Bring medium pot of salted water to a boil, add cavatappi to pot

Cook for 11 minutes

Reserve 1/2 Cup of pasta water, drain remainder

Step 2: Prep and Mix Filling

Trim and quarter zucchini

Halve, peel, and finely chop shallot

In a small bowl, combine panko, basil paste, half the cream cheese, and half the parmesean

Step 3: Prep and Season Chicken

Pat chicken dry with paper towels

Place between 2 large pieces of plastic wrap

Pound with a mallet or rolling pin until chicken is 1/4 inch thick

Remove and discard top layer of plastic wrap

Season chicken all over with 1/2 TSP of italian seasoning, and 1/4 TSP of salt and pepper

Keep chicken on plastic wrap, add panko filling to bottom third of each cutlet. Tightly roll up Chicken over filling, starting with filled side, removing plastic wrap as you go

Place stuffed chicken, seam side down, on one side of lightly oiled baking sheet

Lightly drizzle oil over chicken

Step 4: Roast Chicken and Zucchini

On opposite side of sheet from stuffed chicken, toss zucchini with a drizzle of oil, salt and pepper

Roast chicken and vegetables on top rack for 18 minutes

Step 5: Make Sauce

Meanwhile in a second bowl, whisk together chicken bouillion paste, and 1/2 cup of water

Heat a drizzle of oil in a medium pan over medium heat

Add shallot and 1/4 TSP of salt and pepper

Cook for 2 minutes

Add tomato paste, reserved pasta water, chicken stock mixture, garlic powder, 1 TSP Italian Seasoning, and 1 TSP of sugar until smooth

Whisk in remaining cream cheese until thickened for 2 minutes more

Step 6: Finish and Serve

Remove pan waith sauce from heat, add drained cavatappi and zucchini, and toss until everything is coated in sauce

Season with 1/4 TSP of salt and pepper

Slice chicken

Divide pasta between bowls, and top with chicken

Top with remaining parmesean, drizzle of oil and pepper

Serve hot and enjoy!
