Chicken Lentil Skillet

TUNISIAN SPICED CHICKEN AND LENTIL SKILLET WITH CHICKEN THEIGHS AND LEMON CREAM SAUCE


PREP TIME: 10 Minutes/ COOK TIME: 50 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Onion, Carrots, Lemon, Ginger, Cilantro, 1 Cup Lentils, Chicken Theighs, 1 TBSP Tunisian Spice Blend, 1 TBSP Garlic Powder, 2 TBSP Of Tomato Paste, 2 TBSP Sour Cream, 2 TBSP Chicken Bouillon Paste


Step 1: Prep

Wash and dry produce

Halve peel and finely dice onion and carrots

Finely mince ginger

Drain lentils

Roughly chop cilantro

Zest and halve lemon

Step 2: Cook Chicken and Vegetables

Pat chicken dry with paper towels

Season all over with 1 TSP Tunisian Spice Blend, and 1/4 TSP salt and pepper

Heat a drizzle of olive oil in a large pan over medium heat

Add chicken and cook for 5 minutes per side

Transfer chicken to a cutting board

Add a drizzle of oil in same pan used for chicken, add onion and carrots. Season with 1/4 tsp of salt and pepper

Cook for 3 minutes

Step 3: Add Lentils and Mix Sauce

Add ginger, garlic powder, remaining Tunisian spice blend,and 1 TBSP tomato paste to pan

Cook for 1 minute

Stir in 1 cup of water, half the cilantro. Bring to a simmer, and cook for 8 minutes. Season with 1/4 TSP of salt and pepper

While lentil mixture cooks, in a small bowl, combine sour cream, lemon zest, juice from lemon, and 1/4 TSP salt and pepper

Step 4: Finish and Serve

Slice chicken

Arrange chicken atop lentils and vegetables

Drizzle everything with lemon cream sauce, and sprinkle with remaining cilantro

Divide between shallow bowls

Serve hot and Enjoy!
