Pork Bolognese

ITALIAN PORK SAUSAGE SPAGHETTI BOLOGNESE WITH ZUCCHINI, PEAS, AND PARMESAN


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

SERVING SIZE: Makes 2 (Based off My Fitness Pal App)/ CALORIES: 1010/ Protein 37g

DIFFICULTY LEVEL: Easy

INGREDIENTS: Crushed Tomatoes, Zucchini, Peas, Italian Pork Sausage, 1/8 Cup of Parmesan Cheese, 1 TBSP Italian Seasoning, Spaghetti, 2 TBSP Pork Bouillon Paste, 2 TBSP Sour Cream


Step 1: Prep

Heat broiler to high

Bring large pot of salted waterto a boil

Wash and dry produce

trim and halve zucchini, and cut into moons

Step 2: Broil Zucchini

Toss Zucchini on baking sheet with a large drizzle of Olive oil, half of the Italian seasoning, and 1/4 TSP of salt and pepper

Broil for 7 minutes

Step 3: Cook Sausage

Meanwhile, remove sausage from casing, and discard casing

Heat a drizzle of olive oil in a large pan over medium heat

Add sausage, remaining Italian seasoning, breaking up meat into pieces

Cook for 6 minutes

Step 4: Cook Pasta

Once water is boiling, add spaghetti to pot

Cook for 11 minutes

Reserve 1/2 cup pasta cooking water, then drain remainder and set aside.

Step 5: Simmer Sauce

While pasta cooks, stir crushed tomatoes, bouillion paste, peas, 1 TSP of sugar in pan with sausage

Season with 1/4 tsp of salt and pepper

Bring to a simmer and cook for 7 minutes

Step 6: Finish and Serve

Stir in sour cream and 1 TBSP of butter into pan with sauce

Add zucchini and drained spaghetti, toss to coat

Stir in reserved pasta water, season with 1/4 TSP of salt and pepper

Divide pasta between shallow bowls

Sprinkle with parmesean

Serve hot and Enjoy!
