Chicken Bacon Ranch Loaded Potatoes With Cheddar Cheese And Scallions


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

DIFFICULTY LEVEL: Easy 

INGREDIENTS: 1/8 Cup of Ranch, Potatoes, Chicken Cutlets, 1 TSP Garlic Powder, Scallions, Bacon, 1/2 Cup Cheddar Cheese, 3 TBSP Sour Cream


Step 1: Prep

Wash and dry produce

Preheat oven to 425 degrees

Slice potatoes

Trim and thinly slice scallions

Toss potatoes on a baking sheet with a drizzle of oil, salt and pepper

Roast on top rack for 25 minutes

Step 2: Cook Bacon

While potatoes roast, heat a large pan over medium heat

Add bacon, turning occasionally and adjusting heat if browning too quickly until crispy

Approximately 10 minutes

Step 3: Cook Chicken

Pat chicken dry with paper towels, and season all over with garlic powder, and 1/4 TSP of salt and pepper

Heat a drizzle of oil in a pan with reserved bacon fat over medium heat

Add chicken

Cook for 7 minutes per side

Transfer chicken to cutting board. Once cool enougj to handle, dice into cubes

Step 4: Finish and Serve

Divide potatoes between shallow plates

Evenly sprinkle with cheddar cheese

Top with chicken and bacon

Drizzle dressing and sour cream

Garnish with scallions

Serve hot and enjoy!
