Monterey Jack Chicken
MONTEREY JACK CHICKEN WITH BACON GREEN BEANS, POTATO WEDGES AND A SIDE OF SRIRACHA MAYO

INGREDIENTS: Green Beans, Bacon, 1 TBSP Ranch Spice, 4 TBSP Mayo, 1 TSP Sriracha, Potatoes, 2 TBSP Ranch Seasoning, 1/4 CUP Monterey Jack Cheese, 1/4 CUP Panko Bread Crumbs, 2 Chicken Cutlets
Step 1: Prep and Cook Bacon
Preheat Oven to 425. Wash and dry produce. Cut Potatoes into wedges. Trim Green Beans and cut into even pieces.
Step 2: Mix Panko
Place 1 TBSP of Butter in a small microwave safe bowl, microwave until melted (30 seconds). Stir in Panko, Monterey Jack Cheese, half the Ranch Spice (you’ll use in the next step), Salt and Pepper (1/4 TSP).
Step 3: Roast Potatoes and Bacon
In a large bowl toss Potatoes with a large drizzle of Olive Oil, remaining Ranch Seasoning, Salt and Pepper. Spread on one side of baking sheet. Place Bacon in top right corner of baking sheet. Roast for 5 Minutes in Oven.
Step 4: Coat and Bake Chicken:
Pat Chicken dry with paper towel, season with Salt and Pepper. Spread Tops of Chicken with 1 TBSP of Mayo each. Mound with Panko mixture, pressing firmly to adhere. Once Potatoes and Bacon have roasted for 5 Minutes, carefully add Chicken to bottom right corner of baking sheet. Roast until Potatoes are Golden, Bacon is crispy, and Chicken is cooked through. Cook time should be 18 Minutes.
Step 5: Cook Beans and mix mayo
When Chicken and Potatoes have 5 Minutes remaining, place Green Beans in a microwave safe bowl, with 2 TBSP of Butter, Salt and Pepper. Microwave for 2 Minutes, or until tender. In a second bowl, combine remaining Mayo with Sriracha. Mix well.
Step 6: Finish and Serve
Chop Bacon, sprinkle over Green Beans. Divide Chicken, Potato Wedges, and Green Beans.
Serve with Sriracha Mayo on the side for dipping. Enjoy!
