Tex Mex Pork Bowls

TEX-MEX PORK BOWLS WITH QUESO, PLUS SALSA FRESCA, WITH BROCCOLI AND CARROTS


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Easy
INGREDIENTS:  Scallions, Broccoli, Tomato, Lime, Fajita spice blend, carrot, queso blanco, ground pork.

Step 1: Prep

Preheat Oven to 425. Wash and dry produce. Slice scallions, cut broccoli into florets, slice carrots, dice tomato, quarter lime.

Step 2: Roast Vegetables

Toss broccoli and carrots with 2 TBSP of olive oil, 1/4 TSP of salt and pepper, and 1 TBSP fajita seasoning. Place on a lined baking sheet. Roast on 425 for 20 Minutes.

Step 3: Make Salsa

Combine diced tomato, sliced scallions, half of squeezed lime, 1/4 tsp of salt and pepper into a bowl, and mix well. Set aside.

Step 4: Cook Meat

In a pot on medium heat, cook ground pork, 1/4 tsp salt and pepper, and 1 TBSP of fajita seasoning for 7 minutes.

Step 5: Warm Queso

In last few minutes of roasting vegetables, place queso blanco in a microwave safe bowl, and microwave for 30-40 seconds until queso is hot and melted.

Step 6: Finish and Serve

Combine roasted vegetables with ground pork, top with queso cheese, salsa fresca, and scallions. Garnish with lime on the side. Enjoy!
