Onion Gravy Meatballs
Meatballs and Creamy Onion Gravy With Charred Peas, and Mashed Potatoes

DIFFICULTY LEVEL: MediumINGREDIENTS: 1 TSP Nutmeg, 3 TBSP Sour Cream, ¼ Cup Panko Bread Crumbs, 1 TBSP Flour, 1 TSP Garlic Powder, Potatoes, Onion, Peas, 2 TBSP Cream Cheese, Ground Beef, 1 TBSP Beef Bouillon Paste
Step 1: Prep and Mash Potatoes
Adjust rack of oven to top position, and preheat oven to 450
Wash and dry produce
Dice potatoes
Place potatoes in a pot cover with enough salted water to cover by 2 inches
Bring to a boil, and cook for 20 minutes
Reserve ½ Cup potato cooking liquid, then drain remainder
Return potatoes to pot and mash with half of the sour cream, 2 TBSP of butter, ¼ TSP of salt and pepper.
Keep covered off heat until ready to serve
Halve, peel and slice half the onion, and mince other half
Step 2: Form and Roast Meatballs
While potatoes cook, in a large bowl combine beef, minced onion, panko, garlic powder, ¼ TSP of nutmeg, and ¼ TSP of salt and pepper
Form mixture into meatballs and place on a lined baking sheet
Roast for 16 minutes
Step 3: Char Peas
Meanwhile, melt 1 TBSP butter in a latge pan over medium heat
Add peas and cook for 3 minutes
Stir in peas, cook for 2 minutes
Turn off heat, transfer to a plate
Step 4: Start Gravy
Heat a drizzle of oil in same pan over medium heat
Add sliced onions, and ¼ TSP of salt and pepper
Cook for 6 minutes
Add 1 TBSP of butter, and whisk until smooth
Sprinkle with flour over onion, and whisk for 2 minutes
Step 5: Finish Gravy
Slowly whisk 1 cup water into pan with onions
Add bouillion paste, cream cheese, and ¼ TSP of nutmeg, salt and pepper
Whisk cream cheese and gravy has thickened for 5 minutes
Step 6: Finish and Serve
Add meatballs to pan with gravy
Toss to coat
Divide mashed potatoes between bowls
Top with meatballs and peas
Serve hot and Enjoy!
