Bruschetta Chicken

Bruschetta Chicken With A Mozzarella Crust, Bacon Mashed Potatoes and Roasted Broccoli


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

INGREDIENTS: Lemon, Tomato, ¼ Cup Panko Bread Crumbs, Parsley, Bacon, Potatoes, ½ Mozzarella Cheese, 1 TBSP Italian Seasoning, Chicken Cutlets, 2 TBSP Sour Cream, Broccoli


Step 1: Prep And Make Crust

Adjust rack of oven to top position, and preheat oven to 425

Wash and dry produce

Dice potatoes

Place potatoes in a pot cover with enough salted water to cover by 2 inches

Bring to a boil, and cook for 20 minutes

Reserve ½ Cup potato cooking liquid, then drain remainder

Return potatoes to pot and mash with half of the sour cream, 2 TBSP of butter, Garlic ¼ TSP of salt and pepper.

Keep covered off heat until ready to serve

Cut broccoli into florets

Place 1 TBSP butter in a medium microwave safe bowl, microwave until melted for 30 seconds

Stir in mozzarella, panko, 1 TSP italian seasoning, and ¼ TSP of salt and pepper

Step 2: Coat Chicken

Lightly oil baking sheet or coat with nonstick spray

Pat chicken dry with paper towels, season all over with ¼ TSP of salt and pepper

Place on side of prepared sheet

Mound mozzarella crust onto tops of chicken, pressing firmly to adhere

Step 3: Roast Chicken and Broccoli

Toss broccoli on opposite side of sheet from chicken with a drizzle of oil, and ¼ TSP of salt and pepper

Roast on top rack until chicken is cooked through and broccoli is tender for 18 minutes

Step 4: Cook Bacon

Place Bacon in a large dry pan over medium heat

Cook for 10 minutes , alternating sides

Transfer to a paper towel lined plate

Step 5: Make Tomato Topping

Finely dice tomato

Pick parsley leaves from stems, finely chop leaves

Zest and quarter lemon

In a small bowl, combine tomato, chopped parsley, a big squeeze of lemon juice, and a drizzle of oil

Season with ¼ TSP of salt and pepper

Step 6: Finish and Serve

Mash potatoes with sour cream, and 2 TBSP of butter until smooth and creamy, adding splashes of reserved potato cooking liquid as needed

Roughly chop bacon, add half to mashed potatoes. Season with ¼ TSP of salt and pepper

Sprinkle broccoli with lemon zest to taste

Divide mashed potatoes, broccoli, and chicken between plates

Spoon tomato topping over chicken, top potatoes with remaining bacon

Serve with remaining lemon wedge on the side

Serve hot and Enjoy!
