Spicy Poke Bowls

SPICY POKE SALMON BOWLS WITH GINGER RICE, SESAME SEEDS, SPICY MAYO, AND PICKLED VEGETABLES AND SLAW


PREP TIME: 10 Minutes/ COOK TIME: 50 Minutes

DIFFICULTY LEVEL: MEDIUM 

INGREDIENTS: English Cucumber, 1 TBSP Sesame Seeds, 1/8 Cup Spicy Mayo, 1/8 Cup Sweet Soy Glaze, Ginger, 1/4 Cup Rice Wine Vinegar, Red Cabbage and Carrot Mix, Scallions, Salmon, 3/4 Cup Jasmine Rice, Lime, Radishes


Step 1: Start Prep

Wash and dry produce

Thinly slice scallions, peel and mince ginger

Step 2: Cook Rice

Melt 2 TBSP butter in a small pot over medium heat

Add scallions, and ginger. Cook for 1 minute

Add rice, 1.25 cups of water, and 1/4 TSP of salt. Bring to a boil

Once boiled, REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

Step 3: Finish Prep

While rice cooks, quarter lime, trim and halve radishes thinly slicing into half moons, thinly slice cucumber

In a medium bowl, whisk together sweet soy glaze, ginger, and juice from half a lime

Step 4: Prep and Marinate Salmon

Pat salmon dry with paper towels

Using a sharp knife, slowly cut between flesh and skin, being careful not to cut into flesh, until skin is fully removed from fish. Discard skin

Dice salmon into 1 inch pieces

Transfer to bowl with soy ginger marinade

Stir to combine. Set aside

Step 5: Pickle Radishes and Cucumber

In a medium microwave safe bowl, combine vinegar, 1 TSP of sugar, 1 TBSP of Water, 1/4 TSP salt and pepper

Stir in radishes, cover with plastic wrap

Microwave for 1 minute

Carefully remove plastic wrap, and stir. Let cool for 5 minutes

Once radish mixture has cooled, stir in cucumbers. Set aside to pickle, stirring occasionally

Step 6: Make Slaw and Cook Salmon

In a medium bowl combine cabbage and carrot mixture, 1/2 TSP of sugar, juice from one lime wedge, and 1/4 TSP of salt and pepper

Heat a large drizzle of oil in a large pan over medium heat

Remove salmon from marinade one piece at a time

Cook for 4 minutes per side

Step 7: Finish and Serve

Fluff rice with a fork

Divide rice between plates, top with salmon, pickled vegetables, and slaw in separate sections

Drizzle with spicy mayo

Garnish with sesame seeds and scallions

Serve hot and enjoy!
