Sriracha Pesto Salmon

Salmon With Scaillion Sriracha Pesto Over Ginger Rice With Green Beans


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Ginger, Scallions, Lime, 1 TBSP Sesame Oil, 1 TBSP Sesame Seeds, 1 TSP Sriracha, Salmon, Green Beans, 2 TBSP Soy Sauce, 3/4 Cup Jasmine Rice


Step 1: Prep

Preheat oven to 425

Wash and dry produce

Peel and mince ginger

Trim and finely chop scallions

Quarter lime

Step 2: Cook Rice

Heat a drizzle of oil in a small pot over medium heat

Add 2 TBSP butter, and ginger

Cook for 1 minute

Add 1.25 cups of water, and 1/4 TSP of salt and pepper

Bring to a boil, and stir in rice

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered off heat until ready to serve

Step 3: Roast Green Beans

Toss green beans with a drizzle of oil, 1/4 TSP of salt and pepper, all purpose seasoning, garlic powder, and paprika

Place on a baking sheet

Roast in oven for 15 minutes

Step 4: Cook Fish

Pat salmon dry with paper towels

Season with 1/4 TSP of salt and pepper

Heat a drizzle of oil in a large pan over medium heat

Add salmon, and cook for 7 minutes skin side down

Flip cook for 2 minutes

Transfer to cutting board to rest

Step 5: Make Scaillion Pesto

While fish cooks, in a medium bowl combine scallions, sesame oil, half the sesame seeds, 1 TBSP olive oil, 1 TSP of ginger, 1 TSP of sugar, juice from half the lime, and Sriracha

Season with 1/4 TSP of salt and pepper

Step 6: Finish and Serve

Fluff rice with fork

Divide rice between bowls and top with green beans

Arrange salmon on top of rice with scallion Sriracha Pesto, and soy sauce to taste

Serve with a lime wedge on the side

Serve hot and enjoy!
