Shrimp Rigatoni

Chicken Alfredo, Fresh Fettuccine Noodles, Parmesean, And Chives

INGREDIENTS: Red Pepper, Scallions, Tomato, Lemon, Chili Flakes, 2 TBSP Cream Cheese, 2 TBSP Sour Cream, Parmesean Cheese, Rigatoni, Shrimp


Step 1: Prep

Wash and dry produce

Bring a large pot of salted water to a boil

Halve, core, and thinly slice bell pepper into to strips

Trim and thinly slice scallions

Dice tomatoes

Zest and quarter lime

Peel and devain shrimp if necessary

Step 2: Cook Bell Pepper

Heat a drizzle of oil in a large pan over medium heat. Add bell pepper and scaillions

Cook for 4 minutes

Season with 1/4 TSP of salt and pepper

Step 3: Cook Shrimp

Add shrimp to pan

Cook for 6 minutes

Season with 1/4 TSP of salt and pepper, and 1/4 TSP of chili flakes

Mix well

Step 4: Cook Pasta

Once water is boiling, add rigatoni to pot

Cook for 11 minutes

Reserve 1/2 cup of pasta water, then drain remainder

Step 5: Make Sauce

Add tomato to pan with shrimp mixture

Cook for 2 minutes

Stir in cream cheese, sour cream, half the parmesean, 1/4 cup reserved pasta water, and 2 TBSP of butter

Season with 1/4 TSP of salt and pepper, and lemon zest

Add drained rigatoni, toss to coat

Step 6: Finish and Serve

Divide pasta between bowls

Sprinkle with scallions, remaining parmesean, and a pinch of chili flakes

Serve with lemon wedge on the side

Serve hot and enjoy!
