Shrimp Curry With Cilantro Jasmine Rice, And Green Peas


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: ½ TSP Garam Masala, Red Onion, 2 TBSP Of Tomato Paste, Green Peas, 2 TBSP Creme Fraiche, Lemon, Shrimp, 1 TSP Curry Powder, ¾ Cup Jasmine Rice, 1 TSP Garlic Powder, Cilantro, 1 TBSP Ginger Paste


Step 1: Prep

Wash and dry produce

Thinly slice onions

Wash and devain shrimp, and remove tails

Finely chop cilantro

Zest and quarter lemon

Step 2: Cook Rice

To a small pot on medium heat, melt 2 TBSP of butter

Combine rice, 1.25 cups of water, Cilantro, and ¼ TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

When ready to serve, fluff Rice with a fork

Step 3: Make Sauce

To a large pan on medium heat, melt 2 TBSP of butter

Add slice onion, and cook for 5 minutes

Combine Lemon zest, juice from half a lemon, creme fraiche, garam masla, tomato paste, curry powder, ginger paste, ¼ Cup of water, and ¼ TSP of salt and pepper

Mix well until fully combined, and creme fraiche is melted

Step 4: Cook Shrimp

Add shrimp to sauce

Season with ¼ TSP of Salt and Pepper

Cook for 7 minutes, shrimp is cooked through, and sauce has thickened

Step 5: Finish and Serve

Fluff Rice with a fork

Divide rice between shallow bowls

Top with shrimp curry

Garnish with remaining cilantro

Serve hot and Enjoy!
