Shrimp Lo Mein

SWEET AND SPICY SHRIMP LO MEIN WITH BOK CHOY, NAPA CABBAGE, CILANTRO AND PEANUTS

DIFFICULTY LEVEL: Easy

INGREDIENTS: Shrimp, Bok Choy, Napa Cabbage, Peanuts, Lo Mein Noodles, Green Beans, Cilantro, 1/8 Cup Sweet Thai Chili Sauce, 1/4 Cup Sweet Soy Glaze, 1 TSP Korean Chili Flakes, 1 TBSP Garlic Powder


Step 1: Prep and Cook Noodles

Bring a medium pot of salted water to a boil

Wash and dry produce

Trim green beans

Quarter Lime

Roughly Chop Cilantro

Once water is boiling add noodles to pot

Cook for 7 minutes

Drain and set aside

Step 2: Cook Shrimp and Vegetables

While noodles cook, rinse shrimp under cold water, then pat dry with paper towels

Season all over with garlic powder

Heat a large drizzle of oil in a large pan over medium heat

Add shrimp, green beans, and bok choy and napa cabbage

Cook for 6 minutes

Step 3: Make Sauce and Toss

Stir sweet soy glaze , chili sauce, 1 TBSP of butter, and chili flakes into pan with shrimp and vegetables

Cook stirring until coated for 2 minutes

Remove from heat

Stir in drained noodles and juice from half of lime until thoroughly coated and combined

Step 4: Finish and Serve

Divide Lo Mein between shallow bowls

Garnish with peanuts and Cilantro

Serve with lime wedge on the side

Serve hot and enjoy
