Honey Garlic Shrimp Po Boys With Seasoned Potato Wedges, And Lemon Garlic Aioli

DIFFICULTY LEVEL: MediumINGREDIENTS: 2 TBSP Sour Cream, Baby Lettuce, 2 TBSP Fry Seasoning, Potatoes, Shrimp, 1/8 Cup Mayo, Demi Baguette, Lemon, 1/8 Cup Honey Garlic Sauce, Scallions, 2 TSP Garlic Powder
Step 1: Prep
Preheat oven to 425
Wash and dry produce
Cut potatoes into wedges
Trim and discard root end from lettuce, and chop
Thinly slice scallions
Zest and Quarter lemon
Step 2: Cook Potatoes
Toss potatoes in a large bowl with a drizzle of oil, half the fry seasoning, and ¼ TSP of salt and pepper
Spray baking sheet with non-stick spray
Add seasoned potatoes in a single layer
Bake for 30 minutes, flipping half way through
Step 3: Make Slaw and Aioli
Meanwhile in a second bowl, combine lettuce, scallions, half the garlic powder, half the mayo, juice from half the lemon, and ¼ TSP of salt and pepper
In a small bowl, combine sour cream, remaining mayo, remaining garlic powder, lemon zest, juice from one lemon wedge, and ¼ TSP of salt and pepper
Step 4: Cook Shrimp
Rinse shrimp under cold water
Pat dry with paper towels
Place in a third large bowl, and season with remaining fry seasoning, and ¼ TSP of salt and pepper
Heat a drizzle of oil in a large pan over medium heat
Cook for 6 minutes
Add honey garlic sauce, and a squeeze of lemon juice
Step 5: Assemble Sandwiches
Halve baguettes lengthwise and toast
Place Glazed shrimp on bottom halves of baguettes
Top with slaw
Close sandwich
Step 6: Finish and Serve
Divide sandwiches and potato wedges between plates
Serve with lemon garlic aioli, and any remaining lemon wedges on the side
