Garlic Butter Shrimp Scampi Over Spaghetti With Roasted Broccoli

DIFFICULTY LEVEL: EasyINGREDIENTS: Broccoli, Lemon, Shrimp, Garlic, 3 TBSP Parmesean Cheese, 1 TSP Chili Flakes, Spaghetti, Seafood Bouillon Paste
Step 1: Prep
Adjust rack to top position and preheat oven to 450 degrees
Bring large pot of salted water to a boil
Wash and dry produce
Cut broccoli into florets
Zest and quarter lemon
Peel and mince garlic
Step 2: Roast Broccoli
Toss broccoli on a baking sheet with a drizzle of oil, and ¼ TSP of salt and pepper
Roast on top rack for 15 minutes
Step 3: Cook Pasta
Once water is boiling, add spaghetti to pot
Cook for 11 minutes
Reserve ½ cup of cooking water, then drain
Step 4: Make Garlic Butter
While pasta cooks, place 3 TBSP butter in a small bowl
Microwave for 10 seconds
Add lemon zest, half the parmesean, ¼ TSP of garlic, chili flakes, and salt and pepper
Step 5: Cook Shrimp
Rinse shrimp under cold water, then pat dry with paper towels
Toss in a large bowl with a large drizzle of oil, remaining garlic, and ¼ TSP of salt and pepper
Heat a large pan over medium heat
Add shrimp, and cook stirring occasionally will opaque and cooked through for 4 minutes
Step 6: Finish and Serve
To a pan with shrimp, add drained spaghetti, broccoli, stock concentrate, garlic butter and ¼ cup reserved pasta cooking water
Toss until everything is thoroughly coated in sauce
Add a squeeze of lemon juice
Season with ¼ TSP of salt and pepper
Divide pasta between bowls and top with remaining parmesean and a pinch of chili flakes
Serve with remaining lemon wedge on the side
