Smoky Chipotle Bowls

SMOKY BEEF CHIPOTLE BOWLS WITH CILANTRO LIME RICE, SALSA, AND CREMA


PREP TIME: 10 Minutes/ COOK TIME: 20Minutes

DIFFICULTY LEVEL: Easy

INGREDIENTS: Tomatoes, Onion, Cilantro, Lime, 1/8 Cup Chipotle Puree, 1 TSP Garlic Powder, 3 TBSP Sour Cream, 1 TSP Cumin, 1/2 Cup Mexican Cheese, Ground Beef, 3/4 Cup Jasmine Rice


Step 1: Cook Rice

Wash and dry produce

Melt 2 TBSP of butter in a medium pot over medium heat

Stir in rice, 1.25 cups of water, and 1/4 TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 15 minutes

Keep covered off heat until ready to serve

Step 2: Prep

While rice cooks:

Dice tomatoes

Halve, peel, and dice onion

Finely chop cilantro

Zest and quarter lime

Step 3: Make Pico

In a medium bowl, combine tomatoes, half the onion, Cilantro, squeezed half of lime for juice, and 1/4 TSP of salt and pepper

Mix well, and set aside

Step 4: Cook Beef

To a large pan on medium heat, drizzle oil

Add beef, breaking up meat into smaller pieces

Add remaining onion, chipotle puree, garlic powder, and 1/4 TSP of salt and pepper

Cook for 6 minutes

Keep covered and off heat until ready to serve

Step 5: Make Crema

In a small bowl, combine sour cream, cumin, 1/4 TSP of salt and pepper, and 1 TSP of water at a time until reaches drizzling consistency

Set aside until ready to serve

Step 6: Finish and Serve

Fluff Rice with fork

Top with beef mixture, Pico de Gallo, and crema

Serve with a lime wedge on the side

Serve hot and enjoy!
