Spiced Chicken Sandwich

SPICY CHICKEN SANDWICH WITH SCALLION CABBAGE SLAW

DIFFICULTY LEVEL: EASY
INGREDIENTS: Scallions, 2 TBSP Sour Cream, 2 TBSP Mayo, 1/3 Cup White Wine Vinegar, Hot Sauce, Brioche Buns, Sliced Dill Pickle, Chicken Cutlets, 1 TBSP Sweet and Smokey BBQ Seasoning, Shredded Cabbage 

Step 1: Prep and Make Slaw

Wash and dry produce.

Thinly slice scallions. Finely chop a few pickle slices.

In a medium bowl, combine scallions, sour cream, half the vinegar, 1.5 TSP sugar, and 2 dashes of hot sauce. Add cabbage, and toss to combine. Season with 1/4 tsp of salt and pepper.

Step 2: Cook Chicken

Pat chicken dry with paper towels. For large chickens, pound chicken to 1/3 inch thick. Season all over with BBQ seasoning, and 1/4 TSP of salt and pepper.

Heat a large pan with oil over medium heat. Add chicken. Cook for 5 minutes per side.

Rest chicken for 5 minutes before serving.

Step 3: Toast Buns and Make Sauce

Halve and toast buns.

In a small bowl, combine mayo, chopped pickles, 1/4 tsp sugar, and remaining hot sauce. Mix well.

Step 4: Finish and Serve

Spread bottom buns with sauce. Fill buns with chicken, and sliced pickles.

Divide sandwiches and slaw between plates. Serve and enjoy!
