Sweet Chili Chicken

SWEET CHILI CHICKEN BOWLS WITH DARK MEAT CHICKEN, JASMINE RICE, BELL PEPPER, AND CANDIED PEANUTS


PREP TIME: 10 Minutes/ COOK TIME: 30 Minutes

DIFFICULTY LEVEL: Medium 

INGREDIENTS: Bell Pepper, Onion, Lime, Cilantro, Peanuts, 3/4 Cup of Jasmine Rice, Diced Skinless Dark Chicken Meat, 1/4 Cup Sweet Thai Chili Sauce, 1/8 Cup Sweet Soy Glaze


Step 1: Prep

Wash and dry produce

Halve core and thinly slice bell pepper into strips, halve peel and thinly slice onions, zest and quarter lime, finely chop cilantro

Step 2: Cook Rice

In a small pot, combine 2 TBSP butter, rice, 1.25 Cups of water, and 1/4 TSP of salt and pepper

Bring to a boil

Once boiled, REDUCE HEAT TO LOW, AND COVER

Simmer for 15 minutes

Keep covered and off heat until ready to serve

Step 3: Candy Peanuts

While rice cooks, heat a large pan over medium heat

Add peanuts, 2 TBSP of water, and 1 TSP of sugar

Cook stirring often until water has evaporated and peanuts are coated lightly toasted

Cook for 5 minutes

Transfer to bowl

Step 4: Cook Vegetables

Heat a large drizzle of oil in the same pan used for peanuts over medium heat

Add bell pepper and onion, season with 1/4 TSP salt and pepper

Cook for 9 minutes

Transfer vegetables to a plate

Step 5: Cook Chicken

Heat a drizzle of oil in the same pan over medium heat

Add chicken

Season with 1/4 TSP of salt and pepper

Cook for 6 minutes

Stir in vegetables

Add soy glaze, chili sauce, and 1 TBSP of butter

Cook for 2 minutes more

Step 6: Finish and Serve

Fluff rice with a fork, lime zest, and 1/4 TSP of salt and pepper

Divide rice between bowls, and top with chicken mixture, peanuts, and cilantro

Serve with lime wedge on the side

Serve hot and enjoy!
