Blackened Tilapia
CAJUN STYLE BLACKENED TILAPIA WITH RED BEANS AND LEMON RICE
PREP TIME: 10 Minutes/ COOK TIME: 45 Minutes

INGREDIENTS: Scallions, Garlic, Lemon, Green Bell Pepper, Tilapia, 1 TBSP Blackening Spice, 2 TBSP Sour Cream, 1 TBSP Hot Sauce, Smoked Paprika, 3/4 Cup Jasmine Rice, 2 TBSP Vegetable Bouillon Paste, 1 Can of Kidney Beans
Step 1: Prep
Wash and dry produce
Halve core and dice bell pepper, trim and thinly slice scallions, peel and mince garlic, zest and quarter lemon
Drain and rinse beans
Step 2: Cook Rice
In a small pot, combine 2 TBSP butter, rice, 1.25 Cups of water, and 1/4 TSP of salt and pepper
Bring to a boil
Once boiled, REDUCE HEAT TO LOW, AND COVER
Simmer for 15 minutes
Keep covered and off heat until ready to serve
Step 3: Cook Vegetables
While rice cooks, heat a large drizzle of olive oil in a large pan over medium heat
Add bell pepper, scallions, and garlic
Cook for 5 minutes
Step 4: Simmer Beans
Stir beans, stock concentrate, paprika, 1/4 cup of water, and 1/4 tsp of salt and pepper with vegetables
Bring to a simmer. Then reduce heat to low
Cook for 8 minutes
Turn off heat, stir in 1 TBSP of butter, and season with 1/4 TSP of salt and pepper
Cover to keep warm
Step 5: Cook Fish
Pat Tilapia dry with paper towels
Season all over with salt and pepper
Rub both sides with blackening seasoning
Heat a large drizzle of oil in a large pan over medium heat
Add Tilapia, and cook for 4 minutes per side
Step 6: Finish and Serve
In a small bowl, combine sour cream hot sauce and 1/4 TSP of salt and pepper. Mix well
Fluff Rice with fork, combine lemon zest , 1 squeeze of lemon wedge, and 1/4 TSP of salt and pepper
Divide rice, beans, and tilapia beween shallow bowls
Top fish with crema, and scallions
Serve with lemon wedge
Serve hot and enjoy!
