Thyme Chicken And Creamy Spinach Sauce With Mashed Sweet Potato, And Roasted Broccoli


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Medium 

INGREDIENTS: Spinach, 1 Cup Cream Sauce Base, 1 TSP Dried Thyme, Broccoli, Chicken Cutlets, 2 TSP Dijon Mustard, Sweet Potatoes


Step 1: Start Prep

Adjust rack to top position, and preheat oven to 425

Wash and produce

Peel and dice potato

Step 2: Cook and Mash Potato

Place potatoes in a medium pot with enough salted water to cover by 2 inches

Bring to a boil and cook until tender for 20 minutes

Reserve 1/2 cup potato cooking liquid, then drain

Return potato to pot and mash until smooth and creamy, adding splashes of reserved potato liquid as needed

Season with 1/4 TSP of salt and pepper

Cover and set aside until ready to serve

Step 3: Finish Prep

While potato cooks, cut broccoli into bite size florets

Finely chop spinach

Step 4: Roast Broccoli

Toss broccoli on a baking sheet with a drizzle of oil, and 1/4 TSP of salt and pepper

Roast on top rack for 20 minutes

Step 5: Season And Cook Chicken

Pat chicken dry with paper towels, season all over with thyme, and 1/4 TSP of salt and pepper

Heat a drizzle of oil in a large pan over medium heat

Add chicken for 7 minutes

Turn off heat, transfer to plate and tent with foil to keep warm

Step 6: Make Sauce

In a medium bowl, combine spinach, cream sauce base, mustard, and 1/2 Cup plain water

Heat pan used for chicken over medium heat. Add spinach mixture. Cook until wilted for 4 minutes

Turn off heat. Season with 1/4 TSP of salt and pepper

Step 7: Finish and Serve

Divide mash potatoes, roasted broccoli, and chicken between plates

Top chicken and mashed potato with creamy spinach sauce

Serve hot and Enjoy!
