Udon Carbonara
Gochujang Miso Udon Carbonara With Shrimp Plus Eggs And Sesame Cucumber

DIFFICULTY LEVEL: MediumINGREDIENTS: 1/8 Cup Gochujang Aioli, Mini Cucumber, Garlic, 2 TBSP Miso Sauce Concentrate, Udon Noodles, 1 TSP Korean Chili Flakes, Shrimp, Scallions, 1 TSP Sriracha, 2 Eggs, 1 TSP Sesame Seeds, Block Parmesan Cheese
Step 1: Prep And Season Cucumber
Bring a medium pot of salted water to a boil
Wash and dry produce
Trim and half cucumber, and cut into half moons. Place in a medium bowl
Add sesame seeds, and ¼ TSP of salt and pepper
Toss to combine. Set aside until ready to serve
Thinly slice scallions, separating whites from greens
Peel and thinly slice garlic
Step 2: Cook Shrimp
Heat a large pan over medium heat with a drizzle of oil
Add shrimp
Season with ¼ TSP of salt, pepper, all purpose seasoning, garlic powder and paprika
Cook for 6 minutes, or until fully cooked
Turn off heat, and transfer to a plate until ready to use
Step 3: Prep Carbonara Sauce
In a large bowl, whisk together eggs, Gochujang Aioli, miso concentrate, and half of the chili flakes
Microphone, grate parmesean into bowl with carbonara sauce
Whisk to combine
Step 4: Cook Noodles
Once water is boiling, add udon noodles to pot
Cook for 2 minutes
Reserve ½ cup of noodle cooking water, then drain
Step 5: Start Carbonara
Using pan from shrimp, add scallion whites and garlic
Cook for 30 seconds
Transer drained noodles to pan, stir to combine
Step 6: Finish Carbonara
Stir carbonara sauce in pan with noodles
Stir vigorously until combined
Stir in ¼ cup of reserved noodle cooking water until combined
Add remaining reserved noodle cooking water. Stir until sauce is creamy and gas thickened for 20 seconds more
Step 7: Finish and Serve
Divide udon carbonara between bowls
Top with shrimp
Garnish with scallion greens
Season with remaining chili flakes, and Sriracha
Serve with sesame cucumber on the side
