Oven Roasted BBQ Chicken Wings With Creamy Pasta Salad, And Sweet Potato Wedges

INGREDIENTS: Green Bell Pepper, 1/4 Cup BBQ Sauce, 1/2 TBSP Baking Powder, Cavatappi Pasta, Chicken Wings, Sweet Potatoes, 1/8 Cup White Wine Vinegar, 1/8 Cup Mayo, 2 TSP Dijon Mustard, 1 TSP Garlic Powder, Celery


Step 1: Roast Wings

Adjust rack to top position and preheat oven to 425 degrees

Bring large pot of salted water to a boil

Wash and dry produce

Thoroughly pat chicken wings dry with paper towels and toss in a large bowl with baking powder, and 1/4 TSP of salt and pepper

Place wings on a wire rack on a baking sheet

Roast on top rack for 50 minutes

Step 2: Prep and Roast Sweet Potatoes

While Wings roast, cut sweet potatoes into thick wedges

Finely dice celery

Halve, core, and dice bell pepper into pieces

Toss sweet potato on a second baking sheet with a large drizzle of oil, and 1/4 TSP of salt and pepper

Roast for 30 minutes

Step 3: Cook Pasta

Once water is boiling, add cavatappi to pot

Cook for 11 minutes

Drain and rinse under cold water until cool, shake off any excess water

Step 4: Make Pasta Salad

While pasta cooks, in a medium bowl combine mayo, mustard, vinegar, garlic powder, 1 TBSP sugar, and 1/4 TSP of salt and pepper

Add celery, bell pepper, and drained cavatappi. Toss until evenly coated

Refrigerate until ready to serve

Step 5: Finish Wings

When wings have cooked for 50 minutes, remove sheet from oven and carefully brush half the BBQ sauce all over wings

Return to top rack until cooked through 10 minutes more

Once wings have finished cooking, transfer to a second medium bowl.

Add remaining BBQ sauce and toss until evenly coated

Step 6: Finish and Serve

Divide wings, pasta salad, and sweet potato wedges between plates

Serve Hot and Enjoy!
