Creamy Garden Trout With Roasted Carrots and Green Beans


PREP TIME: 10 Minutes/ COOK TIME: 30 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: 2 TBSP Sour Cream, Carrots, Green Beans, 2 TBSP Cream Cheese, 1 TBSP Chicken Bouillon Paste, Lemon, Garlic, Rainbow Trout, 1 TBSP Ranch Spice Seasoning Blend


Step 1: Prep

Preheat oven to 425

Chop carrots

Trim green beans

Zest and quarter lemon

Peel and mince garlic

Rinse trout, and dry with paper towels

Step 2: Prepare Vegetables

Line baking sheet with foil

Place carrots on one side of baking sheet, and green beans on the other side

Drizzle both carrots and green beans with oil

Season with ¼ TSP of salt, pepper, all purpose seasoning, garlic powder, and paprika

Step 3: Bake Vegetables

Place carrots and green beans in oven at 450°

Roast for 15 minutes

Step 4: Make Sauce

In a small pot on low heat, melt 2 TBSP of butter

Combine, sour cream, cream cheese, chicken bouillion paste, lemon zest, juice from half of lemon, minced garlic, and ¼ TSP of salt and pepper

Mix well

Simmer on low heat for remainder of cook, stirring occasionally

Step 5: Cook Trout

Heat a large drizzle of oil in large pan

Season both sides of trout with ¼ TSP of salt, pepper, all purpose seasoning, garlic powder, and paprika

Once pan is hot, add trout to pan, skin side down

Cook for 7 minutes

Flip, and cook for 2 minutes more

Step 6: Finish and Serve

To shallow bowls, in separate sections place carrots, green beans, and trout

Drizzle creamy sauce over trout, or small bowl

Serve with lemon wedge of the side
