Curry Half Chicken
CURRY ROASTED HALF CHICKEN AND POTATOES WITH GREEN BELL PEPPERS, PITAS, AND CILANTRO YOGURT SAUCE

INGREDIENTS: Potatoes, Onion, Cilantro, Curry Powder, Yogurt, Pitas, Half Chicken, Green Bell Pepper
Step 1: Prep
Wash and dry produce
Preheat oven to 425
Dice potatoes, slice bell peppers into quarters, cut onion into quarters, roughly chop cilantro
Step 2: Season Vegetables
Toss Potatoes, bell pepper, and onion with a drizzle of oil, half the curry powder, 1/4 TSP of salt and pepper
Place on baking sheet, leaving an empty space in the center
Step 3: Mix Butter, and Cook Chicken
Place 4 TBSP of butter in a small microwave safe bowl, microwave for 30 seconds. Stir in remaining curry powder, and 1/4 TSP of salt and pepper
Pat chicken dry with paper towels, season all over with 1/4 TSP of salt pepper all purpose seasoning and paprika
Place half chicken, skin side up on the center of baking sheet
Pour butter curry mixture over chicken, and rub all over to evenly coat
Roast in oven for 50 minutes
Once cooked, remove from oven. Let chicken rest for 5 minutes before serving
Step 4: Mix Yogurt Sauce
In a small bowl combine yogurt, and remaining cilantro, add 1 TSP of water at at time until mixture is drizzling consistency
Season with 1/4 TSP of salt and pepper
Step 5: Warm Pitas
Wrap Pitas in damp paper towels, microwave for 30 seconds
Slice Pitas into quarters
Step 6: Finish and Serve
Transfer chicken and vegetables to a serving plate
Drizzle with yogurt sauce as desired
Sprinkle with cilantro
Serve with pitas
