Lemon Dill Shrimp, Couscous, And Zucchini


PREP TIME: 10 Minutes/ COOK TIME: 35 Minutes

DIFFICULTY LEVEL: Medium 

INGREDIENTS: ¾ Cup Couscous, Shrimp, Zucchini, 2 TBSP Cream Cheese, Garlic, Dill, Onion, Chicken Bouillon Paste, Cream Sauce Base, Lemon


Step 1: Prep

Wash and dry produce

Trim, halve zucchini, and cut into quarter moons

Peel, halve, and thinly dice onion

Peel and mince garlic

Pick dill from fronds, and finely chop

Zest and quarter lemon

Step 2: Cook Couscous

In a medium pot, combine 2 TBSP of butter and melt, couscous, 1 cup of water. And ¼ TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

Simmer for 8 minutes

Keep covered and off heat until ready to use in step 5

Step 3: Cook Zucchini

Heat a drizzle of oil in a large pan over medium heat

Add zucchini, season with ¼ TSP of salt and pepper

Cook for 6 minutes

Transfer to plate, and set aside

Step 4: Cook Shrimp and Sauce

Heat a drizzle of oil in same pan used for zucchini

Add onion, garlic, and shrimp

Cook for 8 minutes

Stir in cream sauce base, bouillion paste, cream cheese, chopped dill, ½ cup of water, juice from half of lemon, and ¼ TSP of salt and pepper

Cook for 4 minutes more

Step 5: Finish Couscous

Add couscous and zucchini to pan with shrimp mixture

Cook for 2 minutes

Turn off heat, seasob with ¼ TSP of salt and pepper

Step 6: Finish and Serve

Divide couscous between shallow bowls

Sprinkle with lemon zest and remaining dill

Serve with lemon wedges on the side

Serve hot and Enjoy!
