Panko Crusted Chicken With Creamy Zucchini Lemon Orzotto


PREP TIME: 10 Minutes/ COOK TIME: 40 Minutes

DIFFICULTY LEVEL: Medium

INGREDIENTS: Lemon, Scallions, Chicken, ½ Cup Panko Bread Crumbs, ¼ Cup Parmasean Cheese, 1 TSP Garlic Powder, 1 Cup Orzo Pasta, 1 TBSP Vidalia Onion Paste, ½ Cup Cream Sauce Base, Zucchini, 2 TBSP Sour Cream


Step 1: Prep

Adjust rack of oven to top position, and preheat oven to 450

Wash and dry produce

Thinly slice scallions, separating greens from whites

Zest lemon, and quarter

Quarter zucchini

Step 2: Prep Chicken And Zucchini

Pat chicken with paper towels

Brush tops of chicken with sour cream

In a small bowl combine panko bread crumbs, parmesean cheese, garlic powder, 1 TBSP of oil, and ¼ TSP of salt and pepper, and all purpose seasoning

Mound to top of chicken, pressing to adhere

Place to ½ of lined baking sheet

To other half of baking sheet place zucchini

Drizzle with oil, season with ¼ TSP of all purpose seasoning, garlic powder, salt and pepper

Step 3: Cook Chicken and Zucchini

Place Chicken and Zucchini into oven

Bake for 20 minutes, and chicken is cooked through

Step 4: Prep Orzo Pasta

In a small pot on medium heat, melt 2 TBSP of butter

Add scallions, cook for 2 minutes

Add orzo pasta, 1 cup of water, vidalia onion paste, lemon zest, scallion whites, juice from half a lemon and ¼ TSP of salt and pepper

Bring to a boil

REDUCE HEAT TO LOW AND COVER

SImmer for 10 minutes

Step 5: Finish Orzo Pasta

Once Orzo has simmered for 10 minutes, add cream sauce base, and ¼ TSP of salt and pepper

Mix well until combined

Step 6: Finish and Serve

Divide between shallow plates, Orzo, top with zuccinni, and slice chicken

Garnish with scallion greens

Serve with lemon wedge on the side

Serve hot and Enjoy!
